HOW IS CHANTICO ORGANIC AGAVE SWEETENER MADE?

Chantico conducts the whole production process on its estate, making it possible to produce a safer and higher quality product. Our organic agave is sustainably harvested. The heart of the plant is pressed to extract the agave juice, then filtered to remove any plant debris and slowly heated to produce the different flavor profiles of Raw Chantico and Wild Chantico. Raw agave is prepared to raw dietary standards and has a warmer flavor, while Wild agave is prepared traditionally and has a sweet, neutral flavor. Chantico Sweet Granulated Agave Powder is heat dried blue agave that is mixed with an organic corn maltodextrin (to prevent clumping) before being packaged offsite in individual sachets.

HOW DO I SUBSTITUTE ORGANIC AGAVE SWEETENER FOR REFINED SUGAR IN MY RECIPES?

Chantico is a great substitute for sugar in most recipes. Because Chantico is sweeter than sugar—in general, 2/3 cup of Chantico will replace 1 cup of sugar. Additionally, you’ll need to decrease the liquids in your recipe by 1/4 and reduce the baking temperature by 25ºF. Lastly, decrease the baking time by 1 minute for every 15 minutes to prevent over-browning. Please let us know if you have any questions about our recipes or send us your ideas using Chantico.

WHAT IS CHANTICO AGAVE?

Chantico Agave is an all-natural, organic, Non-GMO sweet syrup made from our sustainably grown, organic Mexican agave plants.

Our Blue Agave powder comes from our Tequila estate in Jalisco, Mexico. Our Wild and Raw agave use a wild agave species that grows on communally owned lands in the mountains of Ejido Santiago, in Zacatecas.

HOW DO I SUBSTITUTE CHANTICO FOR HONEY IN MY RECIPES?

Simply replace honey with an equal amount of Chantico. Reduce the baking temperature by 20%, as agave will caramelize more rapidly than honey.

HOW LONG HAS CHANTICO BEEN IN BUSINESS?

Our estate has been producing agave and agave sweeteners for more than 25 years. The Chantico brand was created in 2011.

HOW IS CHANTICO DIFFERENT FROM CORN SYRUP

 Corn syrup is made by creating a chemical reaction between filtered corn starch (already processed) and an acid mix. This initial corn syrup contains mostly glucose with little fructose; then to sweeten further high-temperature enzymes are added to metabolize the starch and convert the glucose and other sugars to fructose. This end-product has a higher glycemic index rating, causing major spikes in insulin. This triggers greater food cravings, among other problems.

Chantico Organic Agave is extracted from agave plants through filtered hydrolysis. The agave piña is pressed to extract the liquid, which is filtered, then the sugars are reduced into a syrup-like liquid, often called nectar. Depending how hot and how quickly the nectar is reduced creates different tastes and colorings. The balanced amounts of the two basic natural plant sugars glucose and fructose result in a lower glycemic index rating than high-fructose corn syrup among other benefits. This gives some individuals the incentive to use Chatico as a substitute for honey, chemically engineered no-calorie sweeteners and traditional table sugars.

HOW DOES CHANTICO COMPARE TO HONEY AND SUGAR?

The entire line of Chantico provides the benefit of a lower glycemic index than honey or sugar. And because Chantico is sweeter, you can use less to equal the same level of sweetness, which can save you calories. Chantico pours easily because it does not crystallize like honey and it dissolves well, even in cold beverages. 

WHERE DOES CHANTICO FALL ON THE GLYCEMIC INDEX?

GI is a measure of the speed in which blood sugar levels rise after eating individual foods. To reduce a risk of diabetes, coronary heart disease, and weight gain, a healthy diet may include substituting high GI foods with lower GI foods. Chantico has a certified GI of 22.24, compared with a GI of 68 for table sugar. A low GI food will release carbohydrates more slowly and steadily, which leads to more suitable after-meal blood glucose readings.

WHERE DOES THE SWEETNESS IN CHANTICO COME FROM?

The sweetness in Chantico comes from a complex form of fructose, which gives it a lower Glycemic Index than honey or sugar. Fructose occurs naturally in fruits, vegetables and other foods.

DOES CHANTICO AGAVE CONTAIN ALLERGENS?

Chantico Organic Agave Sweeteners are Non-GMO, vegan, dairy-free, peanut-free, soy-free, tree nut-free, and gluten-free.

WHAT IS THE DIFFERENCE BETWEEN RAW AND WILD CHANTICO?

All Chantico varieties are certified organic and GMO-free. Raw Chantico is slowly heated to 48° C. which gives it a distinct dark amber color and delicate flavor. Wild Chantico has a light, neutral, sweetness which is created by heating the agave to 80° C, giving this flavor a lush golden hue.

We take our sustainably harvested WILD Mexican Agave and add a touch of Chile de Árbol. 

WHAT IS CHILE DE ÁRBOL?

Chile de Árbol is native to Jalisco, Mexico (the home of Tequila and the same state where our Agave is crafted) and used in a variety of traditional and modern cuisines. The Chile has about 120 Scoville and a delicious flavor. It is also known as bird's beak chile and rat's tail chile. 

HOW DO I USE CHANTICO HOT AGAVE?

Use Chantico HOT Agave on veggies, pizza, wings, seafood, salad, pasta, dips, cocktails, pancakes, or anything that can use a little sweet-heat.
