Grown-Up Coffee Shortbread Cookies

INGREDIENTS:

  • 7 oz butter

  • ½ tsp salt

  • ½ cup Chantico BLUE Agave Granulated Powder

  • 2 ¼ cups flour

  • 1 tsp cardamom

  • 2 ½ tbsp instant coffee

  • 3 oz chocolate chips

  • 1 tbsp vegetable oil

DIRECTIONS:

  1. Mix butter, salt, and sugar in a bowl until even.

  2. Add flour, cardamom, and instant coffee. Mix well.

  3. Shape dough into flat discs, 2-3 inches in diameter.

  4. Line a baking tray with parchment paper and transfer dough discs to it.

  5. Bake for 10 minutes at 360ºF/180ºC.

  6. Add the chocolate chips to a bowl and pour oil over them.

  7. Microwave for up to 2 minutes, until melting.

  8. Dip the cookies in the melted chocolate. Let cool, then serve.
